Place the sliced beef liver in a shallow dish and cover completely with whole milk. Let it soak at room temperature for 30 minutes. This draws out any strong bitter metallic flavors and tenderizes the meat.

While the liver soaks, melt 2 tbsp butter with 1 tbsp olive oil in a large skillet over medium heat. Add the sliced onions and ½ tsp salt. Cook low and slow, stirring occasionally, until deeply golden brown and sweet. Transfer onions to a plate and cover to keep warm.

In the same skillet, melt remaining 2 tbsp butter with 1 tbsp olive oil over medium-high heat. Add liver slices in a single layer (do not overcrowd). Cook for 1½ to 2 minutes per side until a dark golden crust forms. Do not overcook—liver should remain slightly pink in the center (145°F / 63°C), or it will become tough and rubbery.

Return the caramelized onions to the skillet on top of the liver. Pour in ½ cup beef broth and a splash of Worcestershire sauce, scraping up any browned bits on the bottom of the pan. Simmer for 1–2 minutes until the liquid thickens slightly into a glossy gravy. Serve hot immediately!
